It has been known for years –  drink tea to be calm. It’s not for nothing that monks are accompanied by a cup of tea whilst meditating.

Recent studies are illustrating what millions of tea-lovers have long believed – that if you are upset, stressed or anxious, it pays to make a brew.

Just one cup of tea can reduce those symptoms of anxiety and stress, making you calmer and clearer in your mind.

As well as the soothing qualities of the tea itself it has also been found that the ritual of drinking and brewing tea is also important..

Psychological tests indicate that tea’s calming benefits aren’t just a question of biochemistry but also there is a  social importance of the tea drinking ritual which is to be valued.

You don’t just have to drink tea to enjoy it. In fact there are many things you can do with tea to enjoy it. You just have to know what they are. So here are a few ideas I have gathered for you to try. The sun is shinning and your body needs some attention before you can throw of those winter layers.  Let me help you,  go naked with green tea. Go on, live dangerously and expand your boundaries. Notice the difference you can make to your body.  Drop me a line and let me know how these naked green remedies work for you.

Super chill body care!  Give yourself a treat and put 50 grams of green tea into your bath. Enjoy the luxury and experience the difference this green soak will make to your skin.

Spots move on!  Skin care. Many people swear by the  green tea facial wash. Make one yourself with the cold green tea you brewed earlier. For effective results wash your face at least twice daily with a green tea brew.

Hair baby.   While we’re in beauty mode, be sure to try a green tea hair rinse, especially with that summer sun and sand.  A rinse of strong green tea, left in until it dries and then rinsed out with water does the job just great. Some even say green tea can perhaps help with hairloss.

Smelly feet.   You like wearing your boots  with your latest new summer get up but hey what does it do for your feet cooked in your boots all day long.  I have said it before but will say it again. Treat your tootsies to a strong green tea foot bath. Nothing like it.

Sweet breath. Almost forgot, keep drinking your green tea because it is good for your mouth hygiene and that leads on to the rest…… yep green tea is thought to boost sex drive. Try it! I did ……..;-)

More and more of us are drinking loose tea. Yippee, that’s great. Loose tea is just as easy as tea bags if you have the right gear. Unfortunately, some people are still struggling with those “tea eggs”. You know what I mean, look good, looks design and does not work. :-(

Panna cotta tea for dinner

Winner winner tea for dinner

So last week one of my mates planned a great evening and for 8 friends did some great cooking. I was asked to pair the dishes with some of my teas.  We ended up with a 5 course tasting session both sweet and savoury. A great evening was had by all without a drop of alcohol. Yes, that’s right and that meant no hangover… You should try it! In one of my previous blogs I promised you guys to share some culinary ideas with you so here are a couple of combinations from our evening.

A great start to any party: fine smoked salmon but this time with some of Edgar’s spiced lemon grass tea served hot in a small glass. A surprising combo and certainly a fantastic way to serve this traditional nibble.

Another great combination we discovered was my Sencha tea combined with a panna cotta and a compote of red berries.  The texture of the panna cotta with the soft delicate taste of the Sencha is truly wonderful as the pannacotta is slowly melted by the tea and just as you think you’re at the end of this combination the berries hit you and all three explode together in your mouth. This is truly a match made in heaven, try it for yourself and see. Below is the recipe for the panna cotta and berries.  If you don’t yet have my Sencha – Buy it here now!

 

Ingredients

For the panna cotta

  • 3 gelatine leaves
  • 250ml/9fl oz milk
  • 250ml/9fl oz double cream
  • 1 vanilla pod, split lengthways, seeds scraped out
  • 25g/1oz sugar

For the sauce 

  • Sugar according to your taste
  • 175 ml water
  • 400 gm red berries

For the tea

  • 1000 ml water
  • 3-4gm Edgar’s Sencha loose green tea
  • Small tea glasses to serve

Method

  1. For the panna cotta, soak the gelatine leaves in a little cold water until soft.
  2. Place the milk, cream, vanilla pod and seeds and sugar into a pan and bring to a simmer. Remove the vanilla pod and discard.
  3. Squeeze the water out of the gelatine leaves, then add to the pan and take off the heat. Stir until the gelatine has dissolved.
  4. Divide the mixture among four ramekins and leave to cool. Place into the fridge for at least an hour, until set.
  5. For the sauce, place the water into a pan and bring to the boil. Reduce the heat, add the sugar and simmer until the sugar has dissolved.
  6. Take the pan off the heat and add half the fruit. Using a hand blender, blend the sauce until smooth.
  7. Pass the sauce through a sieve into a bowl and stir in the remaining fruit.
  8. To serve, turn each panna cotta out onto a serving plate. Spoon over the sauce and garnish with a sprig of mint. Dust with icing sugar.
  9. Make my green Sencha loose tea with water no hotter than 80 degrees centigrade and let it brew for at least 6 minutes before serving in a small glass with next to the panna cotta and berries. Try it and let me know what you think.

Tea for Foodies

Just like wine,  good tea is about drinking it on a moment you will enjoy it to it’s maximum. It should make you feel special whatever the occasion, whatever the time. At the same time tea is something that is deeply comforting, deeply ordinary, deeply compassionate. In fact as a tea lover tea is so much part of you it belongs to you and  not only in a teapot, a wine glass or a tea mug but also in your food.  Have you ever tried cooking with tea? By splashing some left over morning brew into a hot pan of dark browned meat and mushrooms for the evenings beef casserole?  Or better still saving that cold tea and using it to make a delicious barmbrack. Who says baking real cake takes time. This cake takes less time to make than drinking a cup of tea. Try it.

Just like wine it is easy to go on for hours about the finesse of different quality teas and I just love to do that but I also love to cook with my teas, to experiment and see what flavours match my delicious brews. Try it and you will find that tea is as much a good cooking ingredient than the other herbs you use in the kitchen. A pinch of tea leaves can do so much more. One of my tea blends is a blend of spices called “ginger zinger”.

It contains ginger, green rooibos, black and white peppercorns and a smidgen of stevia. All natural products that have different properties and effects on the bodies.

Ginger, for example has a long history of use for relieving digestive problems such as nausea, loss of appetite and motion sickness. Ginger is also used for pain, such a headaches and it is known to fight the virus that causes the common cold. Green rooibos tea contains absolutely no caffeine but does contains the antioxidants that stop the wrinkles (and a cheap wrinkle stopper at that for 10 eurocents a cup ;-)). Black pepper is rich in magnesium and lots of essential elements like copper and iron. The outer layer of the peppercorn stimulates the break down of fat. So boost your body with my ginger zinger and drink that booty off.

NEW YEAR RESOLUTIONS

Oh yes, this is going to be the year! You are going to be healthier, fitter, more successful and see more of your friends and family. It’s a common thing to have a list of resolutions for the upcoming year. But why is that? Do you regret anything of the past year? And what happend to the resolutions you made the year before…

So here we are at the New Years BORREL/PARTY  telling all of our good intentions to our colleagues. ”I subscribed to the gym and want lose 5 pound before March” While the other colleague just told everyone that he is going to stop drinking. After half an hour everybody is drinking champagne and eating snacks and appetisers.

I don’t want to discourage people from having good intentions for the New Year but you should have them for every single day! If you reflect on yesterday and come to the conclusion that you could have done better let today be the day you are going to do better. Not tomorrow, next month or this year.

Last Saturday Sinterklaas came to town!

Sinterklaas is the holy saint of the Dutch folks. Where the rest of the world is celebrating Christmas, the Dutch have Sinterklaas. And a lot of Dutch families celebrate both holidays. The story of Sinterklaas is quite interesting.

Sinterklaas aka Sint lives in Madrid and every year he comes to visit the Netherlands. He travels by boat, a classic old steamboat. He brings lots of his helpers and also his white horse along on board. Each year he arrives in a different city and this year it will be Maasland. There will be a big parade with Sint on his white roan (horse), Amerigo. His helpers will handout small biscuits called ”pepernoten”.

On the 5th of December the holy saint celebrates his birthday by giving presents to all of the children that have been good. If you haven’t behaved Sint and his helpers will take you on the boat to Spain and teach you some manners for a year. This is supposed to be a punishment but most kids wish they could go off to Spain with Sint and his helpers.

The night of 4 to 5 December Sint and his helpers will climb the roofs of all the Dutch families. Sinterklaas even goes on his horse down the chimney. Must be one flexible horse… His helpers carry all the presents and drop them off through the chimney. Children often leave a carrot or the like for the horse of Sint, Amerigo. They have to be done just before sunrise. The next morning children go wild when they come downstairs and see what Sinterklaas has left them.

It may sound impossible but hey, Santa Clause has a flying sleigh with flying  reindeers! One thing is certain, Sinterklaas has a sweet tooth! . Specially ”gevulde speculaas” with my masala chai tea!

In the Netherlands Sinterklaas, AKA Dutch Santa, is coming to town this Saturday. That means you will see spiced biscuits everywhere! My Masala chai tea goes very well with spiced biscuits. Summer tea

Edgar’s Blog: Summer vibes!

21st  of June! Aka start of summer!

On this day the sun will be up for the longest number of  hours possible in one day. Almost 17 hours of daylight and maybe even more depending on your latitude. Summer always makes me very happy. Personally I think it’s the most social season of the year. Catching up with friends and spending the late balmy evenings outside enjoying drinks on a cafe terrace. I love it!

At this time of year my  bucket list gets a lot longer. Here are a few things I most def recommend to do this summer.

  • Sailing! Rent a small boat and enjoy the calmness of the water. Cruise along in the canals of Amsterdam with friend and a small BBQ. Or perhaps take a sailboat and be surrounded by wind, water and sunshine.
  • Go work outside! Be creative find new ideas in the great outdoors. All those phone calls or emails can wait a few hours, save them and hit the terrace. Pick a sunny spot instead of a boring restaurant for that important meeting. Is your laptop practically your office? Get your sandals, and sunglasses and go outside to work. Believe me you will do more work than you’ve imagined and that’s not including the extra inspiration and regeneration. Tip: http://www.wamsterdam.com/Wlounge A new hotel in Amsterdam with a rooftop pool! You can also enter the lounge just for drinks and have a swim.
  • Beach! Go to the beach. It sounds a bit like a cliché , it’s so sandy and crowded…. But hey most pubs are more crowded and then you don’t mind. The best way for me to enjoy the beach is when people leave. Leave the office with colleagues and head for the beach on ordinary weekday. When you arrive most people have gone home. Fire up the BBQ, grill up and sip (long Island) Ice tea.
  • Extreme sports! Go extreme and try out a new sport that you might never have dared to do. Wake boarding, surfing, paragliding, base jumping. Most of these sports are a lot more fun in warm and sunny weather.
  • Weekend trips! Last minute deals, train tickets, hotel discounts almost everything is cheaper at this time of the year. Just google for good deals. A weekend in a different city can feel like a short holiday. Go on an adventure!
